Occasion - Christmas

• 125g milk chocolate
• 60g butter
• ¾ cup Chelsea Icing Sugar
• 100g almond meal
• 4 Tbsp Baileys Irish Cream
• 100g milk or dark chocolate, finely grated, to decorate
• ½ cup cocoa powder, to decorate

• 225g dark chocolate
• 1 Tbsp water
• 4 eggs, separated
• ¼ cup Chelsea Icing Sugar
• ¾ cup Chelsea Caster Sugar

Chantilly Cream

• 300 ml cream
• 1 tbsp Chelsea Icing Sugar 
• 1 tsp vanilla essence

• 2 cups Edmonds Standard Grade Flour (300g)
• ¾ cup Chelsea Caster Sugar (170g) + extra for sprinkling (optional)
• 2 tsp Edmonds Baking Powder
• 1 tsp ground cinnamon
• ½ tsp Edmonds Baking Soda
• 1 cup dried cranberries (160g)
• 150g white chocolate, roughly chopped
• 2 eggs
• 1 cup Meadow Fresh Kalo Natural Yoghurt (250g)
• 150ml neutral oil (i.e. canola, sunflower, rice bran)

Pavlova

• 6 egg whites (at room temperature)
• 2 cups Chelsea Caster Sugar
• 1 tsp vanilla essence
• 1 tsp white vinegar
• 2 tsp cornflour

Strawberry Swir

• 1 punnet (250g) strawberries, cut into eighths
• ¼ cup Chelsea Jam Setting Sugar
• 1 tsp vanilla essence
• 100ml water

Filling

• 1 cup cream
• 2-3 drops rose pink food colouring
• 200g large store-bought marshmallows, halved
• 1 packet candy floss (try rose-flavoured Persian fairy floss)
• 1 cup pomegranate seeds
• Edible roses, to decorate (optional)

• 125g butter, softened
• ¼ tsp vanilla essence
• 1 tsp ground cinnamon
• ½ tsp each ground nutmeg, allspice
• ½ cup Chelsea Caster Sugar
• 1 egg, lightly beaten
• 2 cups flour
• Decorate with Chelsea Icing Sugar, silver balls, glace cherries etc.

Mint Syrup (see below)

• 1 ltr pineapple fruit juice
• 1 large can diced peaches in syrup
• 1.25 ltr bottle lemonade
• 1 punnet of strawberries cut in quarters
• 1 packet of glace cherries
• Few sprigs of mint (for garnish)

Mint Syrup

• ½ cup Chelsea Caster Sugar
• 1 cup of water
• Few sprigs of freshly chopped mint

• 1 half ham on the bone
• 20-30 whole cloves
• ½ cup Chelsea Maple Flavoured Syrup or Honey Maple Flavoured Syrup
• 2-3 Tbsp bourbon
• 2 tsp orange zest
• 1 cup Chelsea Soft Brown Sugar
• 3-4 cups water
• Fresh herbs to garnish, eg, bay leaves, rosemary sprigs

• 1 small ready made Christmas Pudding
• 1 cup chocolate chips
• ¼ cup coconut
• 2-3 Tbsp orange juice or brandy
• ¼ cup Chelsea Icing Sugar
• extra coconut for coating

• 1 cup each diced fresh or canned peaches, diced fresh mango
• 2 tablespoons passionfruit pulp
• 1 cup diced strawberries
• 1 cup Chelsea Maple Flavoured Syrup
• 2-3 tablespoons brandy or sherry
• ½ cup fruit juice
• 1 medium sponge (about 20cm)
• 1 litre vanilla bean custard (home-made or good-quality store-bought)
• 150 ml whipped cream

For the Almond Clusters

• 1 cup Chelsea Maple Flavoured Syrup
• ½ cup almonds

• 1 cup (250ml) thickened cream
• 1 cup (250ml) milk
• 4 egg yolks
• 2 Tbsp Chelsea Golden Syrup
• 1 Tbsp cornflour

• ½ cup chopped pecans

Sauce

• 125ml light cream
• ⅓ cup Chelsea Soft Brown Sugar
• ⅓ cup Chelsea Golden Syrup (tin)
• 20g butter
• ½ tsp lemon juice

Puddings

• 125g softened butter
• 1 tsp vanilla essence
• ½ cup Chelsea Caster Sugar
• 2 eggs
• 1 cup self raising flour, sifted
• ¼ cup plain flour, sifted
• ¼ cup milk

Turkish Delight

• 2 cups water
• 4 cups Chelsea White Sugar
• 4 Tbsp cornflour
• 6 Tbsp white grape juice
• 2 tsp rose water
• 1 Tbsp finely chopped pistachio nuts
• A few drops red food colouring
• ½ cup Chelsea Icing Sugar

Rocky Road

• 400g white chocolate, chopped
• 165g Turkish delight, coarsely chopped (recipe above)
• 100g plain digestive biscuits, coarsely chopped
• 85g pistachios, coarsely chopped
• 50g marshmallows, coarsely chopped

• 1 pre-cooked ham (8-10kg)
• 20-30 whole cloves
• ½ cup Chelsea Maple Flavoured Syrup or Chelsea Honey Maple Flavoured Syrup
• ½ cup Chelsea Dark Cane Sugar
• 220g crushed pineapple in syrup, undrained
• 2 Tbsp wholegrain mustard
• 1 Tbsp lemon juice

• 125g butter
• 1 cup Chelsea Dark Cane Sugar
• 1 cup cream
• 1 Tbsp cornflour
• ½ cup cold water

DARK CHOCOLATE LAYER

• 400g can sweetened condensed milk
• 250g Chelsea Dark Cane Sugar (1 ¼ cups)
• 100g butter, cubed
• 1 Tbsp Chelsea Golden Syrup
• 100g dark chocolate, finely chopped

WHITE CHOCOLATE LAYER

• 400g can sweetened condensed milk
• 250g Chelsea Caster Sugar (1 cup + 2 Tbsp)
• 100g butter, cubed
• 1 Tbsp Chelsea Golden Syrup
• 100g white chocolate, finely chopped
• 1 tsp vanilla extract

Topping

• 75g mini pink and white marshmallows (1 heaped cup)

• 1.5kg mixed dried fruit
• 250g glace cherries, red and green mixed
• 100g mixed peel
• 1 Tbsp grated orange rind
• 1 Tbsp grated lemon rind
• ½ cup brandy or dark rum
• 500g butter
• 1 ½ cups Chelsea Dark Cane Sugar

• 1 tsp vanilla essence
