• 6 lemons, scrubbed in cold water

Butterfly Buttercream Icing

• 3 egg yolks (the whites can be stored in a small covered container in the fridge for 2 – 3 weeks. Great for pavlova. Remember 1 egg white = approximately 50 ml)

Strawberry Lamington coating

• 1 ½ cups water
• 85g packet strawberry jelly crystals
• 1 cup desiccated coconut

Strawberry Sauce

• 1 ½ cups strawberries
• 2 Tbsp Chelsea Icing Sugar
• 2 Tbsp strawberry jam
• To serve - 1 cup cream, lightly whipped
