Base

• 6 Sheets Filo Pastry
• 60g Butter, melted
• 2 Tablespoons Chelsea Demerara Sugar, mixed with 1 Teaspoon Ground Cinnamon
• Cream or Ice Cream

• 1½ cups Chelsea Raw Caster Sugar
• 90g butter, softened
• Finely grated rind and juice of 1 lime
• Finely grated rind and juice of 2 lemons
• 3 eggs, separated
• ¾ cup self-raising flour, sifted

Sauce

• 250ml water
• 250ml cream
• 250ml margarine
• 1 cup Chelsea White Sugar

For the dough

• 2 tsp dried yeast
