  • 2 Apples - Medium
  • 2 Carrots - Medium
  • 2 Bananas - Medium
  • 400g fresh or frozen Bluberries
  • 4 Cups Wholemeal Flour
  • 2 Cups Shredded Coconut
  • 1 Cup Walnuts
  • 1 Teaspoon Baking Powder
  • 1 ½ Cups Vegetable Oil
  • 2 Cups Chelsea Soft Brown Sugar
  • 5 Eggs

Method

Pre-heat oven to 170oC  : 1 : Grate Apples, Carrots and Bananas and mix with Blueberries. Mix all dry ingredients together.
2 : Mix remaining ingredients in a separate bowl. Add dry ingredients and mix thoroughly.
3 : Fold in blueberries and grated ingredients. Grease muffin tins and fill with mixture. The filling should be approximately 1cm above the rim of the tin. Bake for 45 minutes.
