  • 8 Weetbix, crushed
  • 2 cups Chelsea White Sugar
  • 2 cups sultanas (or your choice of fruit)
  • 2 tsp baking soda
  • 115g butter, softened
  • 2 cups boiling water
  • 2 eggs
  • 2 cups self raising flour

Method

Preheat oven to 170°C. Add all the ingredients up to the water into a bowl.
Pour over the boiling water and leave to stand for 5 minutes. Now mix together.
Add 2 beaten eggs and 2 cups of Self raising flour & mix again.
Place mixture into 2 greased loaf tins
Cook for about 55-60mins or until skewer inserted comes out clean.
