- 80g Unsalted Butter
- ½ cup Buttermilk
- 3 Eggs
- 1 tsp Vanilla paste

Method
Preheat oven to 150°C fan bake. Place cupcake cases in muffin tray.
Sift all dry ingredients including Chelsea Caster Sugar into a large bowl add butter and mix with electric mixer until it resembles fine bread crumbs.
Add buttermilk, eggs and vanilla paste, mix well.
Use a ladle to fill the cases 1/3 of the way. Bake for 20 to 25 mins. Cool on wire rack and ice.

- 225g Chelsea Caster Sugar
- 1 vanilla pod, split lengthways, seeds scraped out with the tip of a knife (see food team's tip)
- 4 large free-range eggs, at room temperature
To serve
- 20g Chelsea Icing Sugar
- Crème fraîche
- Fresh berries
