Cakes

  • 2 ½ cups flour
  • 2 cups Chelsea White Sugar
  • ⅔ cups cocoa
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 cups warm water with 1 tsp coffee
  • ⅔ cup vegetable oil (mix of olive & canola)
  • 2 tsp vanilla essence
  • 2 tsp apple cider or balsamic vinegar

Marshmallow Frosting

  • 450g unsalted butter
  • 2 tsp vanilla extract
  • 2 198g jar marshmallow fluff or cream
  • 1 ½kg Chelsea Icing Sugar
  • 2-4 tsp cream
  • ½ cup milk
  • 1 cup frozen raspberries

Buttercream Frosting for Crumb Coat

  • 1kg Chelsea Icing Sugar
  • 250g soft butter
  • ¼ - ½ cup milk

Decoration

  • Food colouring (purple, teal & pink)
  • White chocolate
  • Modelling chocolate
  • Gum paste
  • Edible shimmers
  • Alcohol

Method

Preheat oven to 180°C. Grease & line 3 20cm tins.
Cakes : Mix flour, Chelsea White Sugar, cocoa, baking soda & salt together then add all the wet ingredients to the mixture.
Mix well (the mixture will be very runny). Divide evenly into the 3 cake tins.
Bake for approx. 20 minutes until firm to touch (cook for another 10 minutes if necessary). Set aside to cool.
Marshmallow Frosting : Beat butter until smooth using a mixer. Add vanilla and marshmallow and beat.
Gradually add Chelsea Icing Sugar to the mixture and scrape sides as you go. Beat plenty.
**If marshmallow fluff is not available, use marshmallow essence instead of vanilla.
Buttercream Frosting for Crumb Coat
Put Chelsea Icing Sugar, butter and milk together and mix until blended well.
How to assemble: : Once the cakes are cooled stack and layer, using the marshmallow buttercream in between layers.
Crumb coat with the buttercream frosting. Chill until set.
Once set, decorate as desired. Use palette knife to spread various colours then smooth on turn plate.
