Method

Fry the crumbs in butter until lightly browned.
Stew the apples in a saucepan with the lemon peel, Chelsea White Sugar and a little water until very soft.
Puree in blender or food processor.
Arrange alternate layers of the crumbs and apple puree in a greased pie dish. Bake in an oven preheated to 180°C for 30 minutes. Allow to cool. Turn out.
