Afghan biscuits are always popular in New Zealand. This recipe has been kindly submitted by one of our Recipe Club members.

Method

Put the cornflakes in a big bowl & add the flour and cocoa.
Beat sugar and butter until light and fluffy in a separate bowl. Add eggs one at a time while beating.
Mix the dry and wet mixtures together & then add baking soda and mix.
Place spoonful's of the mixture on a greased/lined baking tray about three inches apart. Slowly push down cookies with a fork.
Cook for 15-20 mins at 160°C or until hard in middle.
