Ingredients

  • 1 tbsp vegetable oil
  • 1 brown onion, finely diced
  • 2 cloves garlic, crushed
  • 2 tbsp curry paste
  • 2 tsp cumin seeds
  • 8 cardamom pods
  • 1.2kg ripe tomatoes, peeled, roughly chopped
  • ½ cup raisins
  • ¾ cup malt vinegar
  • 1½ cups Chelsea Jam Setting Sugar
  • Salt and white pepper, to season

Method

Heat oil in a large saucepan over a medium heat. Add onion and garlic and cook for 3 mins or until onion is soft. Stir in curry paste, cumin seeds and cardamom pods and cook for 1 min or until aromatic. Stir in tomato, raisins and vinegar and bring to the boil. Cook for 20 mins or until thickened.
Stir in Chelsea Jam Setting Sugar, season with salt and pepper and bring to the boil. Cook for 4 mins or until mixture thickens. Serve or ladle chutney into sterilised jars, then seal and refrigerate.
