  • 425g Canned Sliced Apples
  • 1 Teaspoon Grated Lemon Rind
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Chelsea Soft Brown Sugar
  • 50g Dried Apricots, chopped
  • ½ Cup Sultanas
  • 1 Teaspoon Ground Mixed Spice
  • ½ Teaspoon Ground Cardamom
  • ¼ Teaspoon Ground Cinnamon
  • 90g Butter
  • ¼ Cup Chelsea Soft Brown Sugar
  • ½ Cup Shredded Coconut
  • ½ Cup Chopped Pecan Nuts
  • Cream, to serve.

Method

Preheat oven to 200°C.

Combine apples, lemon rind, lemon juice, Chelsea Soft Brown Sugar, apricots, sultanas and spices. Place mixture into a medium sized ovenproof dish and set aside. 

TOPPING:
Place flour, cinnamon and butter in a food processor and process until mixture resembles breadcrumbs.

Stir in Chelsea Soft Brown Sugar, coconut and pecans.
Divide topping over apple mixture in dish and bake for 10 minutes until golden.Serve with cream.
