This carrot loaf brings a spicy twist to a classic favourite, all without vegetable oil. Packed with warm spices and naturally sweet carrots, it’s moist, flavourful, and just the right amount of heat. A healthy treat that’s easy to bake and even easier to devour.

  • 3 cups plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cardamon
  • 1 tsp vanilla esscence
  • ⅛ cup orange juice
  • 1 cup apple sauce
  • 1 cup Chelsea White Sugar
  • 1 cup Chelsea Soft Brown Sugar
  • 150g butter
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup sultanas
  • 1 cup walnuts
  • 1 cup sunflower seeds

Method

Preheat oven to 175 degrees.
Sift flour, baking powder, baking soda and salt together in a bowl and set aside.
In a separate bowl, cream together butter, Chelsea White Sugar and Chelsea Soft Brown Sugar until light and fluffy then add vanilla essence, mix well.
In a separate bowl, beat eggs with cinnamon, nutmeg & cardamon for 5 mins, then add orange juice & apple sauce, mix well.
Mix spices mixture with creamed butter mixture together. Fold in flour mixture to wet ingredients. Add carrots, sultanas, walnuts & sunflower seeds, fold mixture until mixed well.
Bake for 1 hour or until skewer comes out clean.
: Makes: 2 loaves from an average sized loaf tin.
