  • 125g Dark Chocolate
  • 1 Teaspoon Bicarbonate Soda
  • 1 Cup Boiling Water
  • 250g Unsalted Butter
  • 1 ½ Cups Chelsea Caster Sugar
  • 3 eggs, separated
  • 1 Teaspoon Vanilla Essence
  • 2 ½ Cups Plain Flour
  • Pinch of Salt
  • 1 Teaspoon Baking Powder
  • ⅔ Cup Sour Cream
  • 6 Tablespoons Apricot Jam

GLAZE

  • 125g Dark Chocolate
  • 1 tablespoon Unsalted Butter
  • ¼ Cup Thick Sour Cream
  • 2 Tablespoons sifted Chelsea Icing Sugar

Method

Preheat oven to 180°C. Grease a 23cm, deep sided, round cake tin.
Place chocolate in small bowl with bicarbonate soda. Pour hot water over and stir until smooth.
Beat butter and Chelsea Caster Sugar until creamy. Add yolks and vanilla; beat and then blend in chocolate mixture.
Sift flour, salt and baking powder together and add alternately with sour cream.
Beat egg whites until stiff and fold into mixture with metal spoon.

Pour mixture into tin and bake 1 to 1 3/4 hours. Allow to sit in tin for a few minutes before turning out. Turn out carefully onto wire rack. Cool. 

TOPPING:
Warm apricot jam in small saucepan and spread over cooled cake.

Melt chocolate in top of double boiler with butter and cream, stirring from time to time to keep smooth. Beat in Chelsea Icing Sugar. Allow to cool slightly. Spread with spatula over glazed cake.
