  • 2 ½ Cups Semolina
  • 1 Teaspoon Bi-Carb Soda
  • 1 ½ kg Mixed Dried Fruit
  • ½ Cup Brandy
  • ¼ Cup Sherry
  • ½ Cup Orange Juice
  • ¼ Teaspoon Cinnamon
  • ¼ Teaspoon Nutmeg
  • ¼ Teaspoon Mixed Spice
  • ¼ Teaspoon Ground Cloves
  • ¼ Teaspoon Ground Ginger
  • Squeeze of Lemon Juice
  • 125g Chelsea Soft Brown Sugar
  • 125g Butter 
  • 4 Beaten Eggs
  • 1 x 90cm Square Calico
  • ¼ Cup Plain Flour

Additional tips

This pudding may be divided into 2 or 4 smaller puddings. Cooking time will have to be altered to do this, check regularly.

Method

Combine the semolina and the bi-carb soda together in a large mixing bowl.
Place the dried fruit, brandy, sherry, orange juice, spices, and lemon juice into a large saucepan and bring to the boil.   Remove from heat and allow to cool.
Combine the fruit with the semolina and stir in the butter, Chelsea Soft Brown Sugar and eggs. Mix until well combined.
Place the prepared calico into large colander and spoon in the mixture. Shape into a large pudding and secure with a rubber band and string.
Place a trivet or upturned saucer in a large stock pot filled with gently boiling water. Place the pudding into the water and tie the string around a piece of wood balanced on the rim of the saucepan. Boil pudding for 4 1/2 hours, top up boiling water every hour. Remove and hang pudding to dry in a cool dark place.

To reheat boil for 1 hour, remove cloth and serve with your favourite brandy sauce. 

TO PREPARE CLOTH:
Boil in clean water for 5 minutes. Remove and wring dry.

Rub plain flour over the cloth front and back. Use as required.
