Ingredients

Vanilla Bean Ombre Cakes

  • 240g butter
  • 400g Chelsea White Sugar
  • 4 large eggs
  • 375g plain flour
  • ½ tsp salt
  • 15g baking powder
  • 200ml milk
  • 10ml white vinegar
  • 3 tbsp sour cream
  • 2 tsp vanilla bean paste
  • Food colouring (red, blue)

Blueberry Lime Buttercream

  • 200g unsalted butter
  • 500g Chelsea Icing Sugar
  • ¼ cup cream
  • ¼ cup blueberry puree
  • 2 limes (juice & zest)
  • 1 tsp blueberry extract

White Chocolate Blueberry Ganache

  • 500g white chocolate
  • 125ml cream
  • ½ tsp blueberry essence

Decoration

  • Fondant
  • 500g Chelsea White Sugar 
  • Modelling chocolate

Method

Preheat oven to 180°C. Grease and line 1 x 20cm & 1 x 18cm cake tins.
Vanilla Bean Ombre Cakes : Cream butter and Chelsea White Sugar until pale. Add eggs one at a time to this mixture and mix.
Combine flour, salt and baking powder. Combine milk, vinegar, sour cream and vanilla bean paste.
Add dry and wet ingredients to the egg mixture in batches, starting and ending with dry ingredients and mix in.
Divide into bowls and colour as desired to get blue colour gradation.
Pour into tins and bake at 180°C for 30 to 35 minutes until cooked.
Once baked, set aside to cool.
Blueberry Lime Buttercream : Whip butter and Chelsea Icing Sugar until fluffy.
Add blueberry puree, blueberry essence, lime juice, lime zest and half the cream and whip until light and fluffy.
Add more cream to adjust consistency if necessary.
White Chocolate Blueberry Ganache : Combine all ingredients in a glass bowl and microwave for 2 minutes in 30 second bursts till melted.
Combine till smooth and let cool slightly at room temperature. Whip with a hand blender.
Cool completely before use. How to assemble:
Stack the smaller cake on top of the larger one. Ice cooled cakes with the blueberry lime buttercream.
Cover with the white chocolate ganache and decorate to your heart's desire, using Chelsea White Sugar and chocolate.
