Ingredients

SALTED CARAMEL SAUCE

  • ¾ cup cream (190ml)
  • ¾ cup Chelsea Dark Cane Sugar (150g)
  • 120g butter
  • 1 tsp sea salt

APPLES

  • 1kg Granny Smith apples (approximately 8 apples)
  • 1 Tbsp plain flour

CRUMBLE

  • 1 cup plain flour (150g)
  • 1 cup quick cook oats (120g)
  • ¾ cup Chelsea Dark Cane Sugar (150g)
  • ½ tsp baking powder
  • 120g butter, melted

Additional tips

You can peel the apples if you prefer, but this isn't necessary.

Method

Preheat oven to 180ºC fan bake.
SALTED CARAMEL SAUCE : Place cream, sugar and butter in a heavy-based saucepan on medium heat. Cook until butter is melted and mixture is smooth and simmering. Simmer for 2 minutes, stirring frequently. Remove from heat and stir in salt.
APPLES : Core apples and dice into 1-2cm cubes. Toss with the flour in a large bowl. Add two thirds of the caramel sauce (reserve the rest to serve with the crumble). Place in a large (approximately 20cm x 25cm) oven-safe dish.
CRUMBLE : Combine flour, oats, sugar and baking powder in a large bowl. Add butter and mix until well combined and crumbly. Spoon on top of the apples.
Bake for 35 minutes, until apples are tender and crumble is golden brown. Allow to rest for 5-10 minutes before serving with ice cream or cream. Warm up the leftover caramel sauce and drizzle over the top.
