Have just made this . Boiled for 5 mins and then left it on the bench after I sliced it up. It has gone rock hard. Did not put in the fridge. Will try it again but will only boil for 3 mins

You can make this while waiting for biscuits to bake. Use 5 cups of rice bubbles to make it go further. I use different types of honey and usually add heaped tablespoons. Adding some Manuka or blue borage if you are feeling dangerous. Definitely cut when warm. Baking paper in a sponge roll tin works well.

Grease a 20cm square baking tin or dish and line with baking paper.
Place butter, Chelsea Caster Sugar and honey in a large saucepan. Cook over medium heat until butter has melted. Increase heat a little and bring to the boil; boil for 3 minutes.
Remove from heat, add rice bubbles and stir well. Transfer to prepared dish and use a spatula to flatten out. Top with sprinkles, if desired. Slice while still slightly warm.
