  • 4 Tablespoons Chelsea Golden Syrup
  • 4 Tablespoons Orange Juice
  • 3 Tablespoons Pitted Dates, chopped
  • 3 Tablespoons Pecan Nuts, chopped
  • ¼ Teaspoon Cinnamon
  • ½ Teaspoon Nutmeg
  • Butter for greasing
  • 2 Cups of cooked White or Brown Rice

Method

Pour Chelsea Golden Syrup and orange juice in a saucepan.  Heat on medium for 1 minute until melted.
In a bowl mix together the dates, pecan nuts, cinnamon and nutmeg.
Grease four custard cup moulds. Place a teaspoon of the date and nut mixture in each mould.
Add 2 teaspoons of the Chelsea Golden Syrup sauce. Add the cooked rice to the date and nut mixture.   Tightly pack this mixture into the moulds, spooning a tablespoon of sauce over the top of each mould.
Cook in a moderate oven (180°C) for 5 minutes. To serve, turn moulds upside down onto the plate and the rice 'castles' will slide out easily.
