  • 1 bunch rhubarb, trimmed and cut into 6cm lengths
  • ½ cup Chelsea Coconut Sugar
  • ¼ cup water
  • 3 strips orange peel
  • 2 fresh bay leaves
  • 1 punnet blackberries
  • 1 punnet raspberries
  • Greek yoghurt or coconut yoghurt , for serving

Method

Pre-heat oven to 180°C fan-forced.
Place rhubarb, Chelsea Coconut Sugar, water, peel and bay leaves in a small baking dish. Toss well. Cover with foil and bake for 15 mins.
Add berries to baking dish, gently toss to combine and return to the oven for a further 5 mins uncovered. Serve warm with Greek yoghurt or coconut yoghurt or chilled on your morning cereal.
