Cupcakes

  • 60g butter
  • ¾ cup Chelsea Caster Sugar
  • 1 egg
  • 2 ½ Tbsp cocoa powder
  • 3 Tbsp red food colouring
  • ½ tsp vanilla essence
  • ½ cup buttermilk
  • 1 cup + 2 Tbsp standard flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 ½ tsp white vinegar
  • 1 cup dark chocolate
  • Dried raspberries to decorate

Cream Cheese Icing

  • 115g butter
  • 115g cream cheese
  • 2 ½ cup Chelsea Icing Sugar
  • 1 Tbsp vanilla essence

Frosting

  • 1 ½ cups butter
  • 5 cups Chelsea Icing Sugar
  • 2 Tbsp milk
  • 2 ½ tsp vanilla to taste

Method

Preheat oven to 180°C. Line your muffin tray with cupcake cases.
Cupcakes : Cream butter and Chelsea Caster Sugar until light and fluffy at medium high speed.
Turn to high and add egg, scraping down edges to incorporate everything.
In another bowl, mix cocoa, vanilla and red food colouring to make a paste.  Add to batter on medium until combined.
Turn to low and add half of the buttermilk and half of the flour, mix until combined, scrape bowl and repeat with the other halves and then beat on high low speed. Add salt, soda and vinegar, turn to high and beat until smooth. Stir in chocolate chips.
Divide into cups and bake for approx. 20 minutes.
Remove from muffin tin and cool on a wire rack for 10 minutes.
Cream Cheese Icing : Add butter and cream cheese in a bowl, and beat on high.
Add Chelsea Icing Sugar, vanilla and beat until light and fluffy.
Frosting : Beat Chelsea Icing Sugar into butter, add milk until the consistency is right.
