Not sure why, but it is a shame and a waste of ingredients :(CHELSEA: Hi there, sorry to hear these didn't work out well for you. Sometimes over mixing the muffin mixture can cause them to be dense or doughy. Another thing to check is the self-raising flour - if this is more than 4-6 months old the raising agents may not be effective anymore.
