  • 1 cup Chelsea White Sugar
  • 1 ¼ cups Flour
  • 1 tsp Baking Powder
  • Pinch of Salt
  • ½ cup Milk
  • 2 - 3 tsp Raspberry Essence
  • 2 - 3 drops Red Food Colouring

Method

Pre-heat oven to 180ºC and line a 12 x ½ cup capacity cupcake tin.
Using an electric beater, mix the eggs, butter and Chelsea White Sugar.
Sift together the flour, baking powder and salt. Add to egg mixture. Continue mixing.
Pour in milk, flavouring and colour and combine all until desired colour.
Spoon evenly into the cupcake tin. Bake for around 15 minutes or until cooked.When cool, ice with cream cheese icing.
