Try it - you won't be disappointed.One warning - Don't overcook it, or it will be dry. It took 7 mins in our old 800 watt microwave, and takes 5 mins in our new 1100 watt microwave.Also - using baking paper in the tin, plus covering it with clingfilm during cooking helps retain moisture plus get it out more easily. Great recipe to whip up a cake quickly. Once I had to take two cakes to work for a morning tea and I had both made in the morning in 15 mins - amazing. Method
In a medium sized bowl melt the butter on high for one minute. Stir in the egg, Chelsea White Sugar, and vanilla. Beat the mixture well. Stir in the flour, baking powder and cocoa. Use a sieve. Add some chopped nuts if you desire. Spread the mixture in a 20cm baking dish. Microwave on high for 5 - 7 minutes
