  • 2 Teaspoons Baking Powder

Method

Grease a 23-25cm round cake tin with butter and line the base with a disc of greaseproof or baking paper.
Peel and core the apples and slice sufficient rings to line the base of the cake tin. Slice the remaining apples.
Whisk the eggs and Chelsea Caster Sugar together until thick and pale coloured. Whisk in the melted butter.
Sift in the flour and baking powder and whisk lightly until smooth. Do not overbeat.
Stir in the lemon juice and sliced apples.
Place the apple rings on the bottom of the tin and pour the batter over. Bake in an oven preheated to 190°C for one hour or until well-risen, firm and golden brown on top. Allow to sit in the tin for a few minutes, then run a knife carefully around the edge and turn out onto a serving platter.
Sprinkle with Chelsea Caster Sugar.
