  • 2 cups frozen mixed berries, defrosted on paper towel
  • ½ cup extra-light sour cream
  • ½ cup low fat milk
  • 1 x 50g egg, lightly whisked
  • ¼ cup Chelsea Icing Sugar 
  • 1 tsp vanilla extract or vanilla essence
  • 2 tbsps wholemeal plain flour
  • Chelsea Icing Sugar, for dusting (optional)

Method

Preheat oven to 200°C conventional or 180°C fan forced. Divide the berries between four shallow ovenproof dishes.
Put the sour cream, milk, egg, Chelsea Icing Sugar, vanilla extract and flour in a medium bowl. Whisk well to combine. Pour the mixture evenly over the fruit. Bake for 20-25 mins or until just set and light golden.
Dust the clafoutis with Chelsea Icing Sugar, to serve, as desired.
