Ingredients

Thyme Shortcrust

  • 250g plain flour
  • 150g butter
  • 85g Chelsea Caster Sugar
  • 1 tbsp thyme leaves, chopped
  • 1 mandarin (zest)
  • Orange marmalade to brush over

Mandarin Frangipane

  • 300g butter
  • 300g Chelsea Caster Sugar
  • 6 eggs (beaten)
  • 300g almond meal (blanched almonds)
  • 3 mandarins (zest)
  • 100g plain flour
  • ½ tsp baking powder
  • 25 freeze dried mandarin wedges
  • 1 tsp chopped thyme

White Chocolate & Orange Blossom Filling

  • 600g white chocolate
  • 1 tsp orange blossom water

Decoration

  • 1 cup freeze dried mandarin slices
  • Thyme sprigs
  • Toasted almond silvers

Method

Preheat oven to 180°C. Line and grease a 25cm x 30cm slice tin.
Thyme Shortcrust : Blitz flour, butter, Chelsea Caster Sugar, thyme leaves and mandarin zest in a food processor.
Bake at 180°C for 10 minutes until the sides turn slightly golden.
Set aside to cool. Mandarin Frangipane
Beat butter and Chelsea Caster Sugar until fluffy and pale. Add eggs one at a time and beat in.
Add almond extract, mandarin zest and chopped thyme and mix in. Pour over cooled base and spread it. Poke in mandarin wedges.
Bake at 180°C for 25 to 30 minutes.
Once baked, set aside to cool completely.
White Chocolate & Orange Blossom Filling
Melt white chocolate over a pot of simmering water. Add orange blossom water. Cool slightly.
How to assemble: : Pour the orange blossom filling over the completely cooled slice.
Garnish with freeze dried mandarin slices, thyme sprigs and toasted almond silvers & brush over with orange marmalade as desired.
Set well before cutting & serving.
