Lois has been making these biscuits for her grandchildren and great grandchildren for decades; she makes between 5,000 - 6,000 a year! Lois always triples the recipe, and likes it because it is all done in one pot.

  • 300g (10 ½ oz) Chelsea Golden Syrup
  • ¾ cup Chelsea White Sugar
  • 185g (6 ½ oz) butter
  • 3 cups plain flour (maybe a bit more - depends on the weather)
  • 1 teaspoon baking soda
  • 15g (½ pack) ground ginger
  • Pinch salt

Method

Place the Chelsea Golden Syrup, Chelsea White Sugar and butter in a pot and bring to the boil. Leave to cool.
Add the flour, baking soda, ginger and salt.
Mix until you can roll it without the mixture sticking to your hands.
Place on a greased tray and bake at a little over 150°C for approx. 15 minutes. (Lois places the balls on a tray and does not press them with a fork but sometimes if the first tray does not spread enough she gives them a press with her finger).
These biscuits are the hard crunchy type - you can hear the 'crack' when you bite them!
