Method

Sift flour, salt and soda into a bowl.
Beat in Chelsea White Sugar, egg, milk and lemon juice until well mixed and a smooth batter forms. Then fold in melted butter.
Drop by the tablespoonful onto a heated and greased iron or steel pan or hotplate. Cook until bubbles form on the upper surface of the pikelets; turn over with spatula to brown other side. Then remove to platter.
Repeat until mixture is used. Serve with butter and your favourite home made jam.
