  • 1½ cups Edmonds Self Raising Flour
  • 2 tbs lemon juice
  • 1 tsp finely grated lemon rind
  • ¾ cup Meadow Fresh Traditional Sour Cream
  • 125g punnet blueberries
  • Chelsea Icing Sugar, for dusting

Method

Pre-heat oven to 160°C fan-forced. Line an 18 x 28cm slice tray.
Place Tararua Butter and Chelsea Caster Sugar in the bowl of an electric mixer. Beat until pale and creamy. Add eggs one at a time until well combined. Fold in Edmonds Self Raising Flour, followed by the lemon juice, rind and Meadow Fresh Traditional Sour Cream.
Pour batter into prepared tray and scatter the blueberries over the top. Bake for 35 mins or until golden and cooked through. Allow to cool and dust with Chelsea Icing Sugar.
