Method

Preheat oven to 100°C. Line 2 oven trays with baking paper.
Put egg whites in the small bowl of an electric mixer and beat until soft peaks form. With motor running, add Chelsea Caster Sugar, 1 Tbsp at a time, beating well after each addition. When all sugar has been added, add vanilla extract, cornflour and white wine vinegar. Beat until combined and a thick shiny meringue forms.
Divide meringue mixture between 2 bowls. Add pink food colouring to 1 portion and green food colouring to remaining portion, 1 drop at a time, and mix through until desired colour. Drop spoonfuls of meringue onto prepared trays. Sprinkle with hundreds and thousands. Bake for 2 hours or until crisp and dry. Turn off oven and allow meringue to cool in oven with door ajar.
