  • Pinch of Bicarbonate Soda
  • 125g Unsalted Butter
  • 60g Roasted Hazelnuts
  • 60g Chelsea Caster Sugar
  • 1 Egg Yolk
  • Mixed Berry Jam
  • Chelsea Icing Sugar

Additional tips

For a delicious touch, coat the surface with a little melted and cooled dark chocolate.

Method

Sift flour and soda together.
Rub butter into flour until it forms crumbs.
Add hazelnuts, Chelsea Caster Sugar and egg yolk, mixing to form a soft dough.
Allow it to rest in the refrigerator for one hour.
Roll out on a floured board to about 5mm thick.
Cut into rounds using a fluted cutter about 3.5cm in diameter.
Transfer carefully with a spatula to a floured baking sheet. Bake in an oven
preheated to 180oC for about 20 minutes or until just browning.
When cool sandwich together with the jam. Sprinkle with Chelsea Icing Sugar.
