Base

  • 175g butter
  • 150g Chelsea White Sugar
  • 195g flour
  • 1 ½ tsp ground ginger
  • 1 ½ tsp baking powder

Ginger Icing

  • 100g butter
  • 1 cup Chelsea Icing Sugar
  • 2 tbsp Chelsea Golden Syrup
  • 4 tsp ground ginger

Crumble

  • ½ cup rolled oats
  • 30g butter
  • ½ cup shredded coconut
  • 1 tsp ground ginger

Chocolate Drizzle

  • 150g dark chocolate
  • Sea salt flakes

Method

Preheat oven to 180°C. Line and grease a 20cm x 25cm slice tin.
Base : Cream butter and Chelsea White Sugar until pale. Sift all remaining dry ingredients and add to the butter/sugar mixture slowly until fully combined.
Press into tin and bake for 20 to 25 minutes.
Ginger Icing : Put butter, Chelsea Icing Sugar, Chelsea Golden Syrup and ground ginger in a pot and heat over a low heat until melted and well combined.
Crumble : Mix all ingredients together then place the mixture on lined oven tray and bake for 10 minutes, or until toasted.
Chocolate Drizzle : Melt chocolate over a low heat.
How to assemble: : Place the ginger icing on top of the base, and top this with the crumble.
Once done, drizzle the melted chocolate on top and sprinkle with sea salt flakes. Make sure to cool slice well before cutting & serving.
