I had leftover uncooked puds which I refrigerated and cooked up a few days later - still came out fluffy and moist. Method

Spray 4 straight sided coffee mugs with non stick baking spray.
Divide the chopped fruit equally between the mugs. Spoon a tablespoon of jam over the fruit. Place the butter in a medium sized microwave proof bowl. Melt on high power for 30 - 40 seconds. Beat in the egg and Chelsea Caster Sugar then mix in the flour and milk. Spoon the mixture over the fruit and jam. Place all four mugs in the microwave and cook together on high for 3½ - 4 minutes. Rest the puddings for 2-3 minutes in the mugs then tip out onto individual plates. Serve with fruit yoghurt, whipped cream or ice cream.
