I have frozen the surplus feijoas whole, skin on, they peel easily when taken out for a while, and are just as good as fresh in muffins., approved=true, user_name=1560827711, hs_createdate=1702249853753, rating_new__1_5_=5, id=11175557449}, {comment_text=Easy and quick to whip up and delicious. I modified it slightly by using raw sugar and I halved the amount in the recipe. Also I try and sneak in wholemeal flour to all my muffins too so I added 1 cup white and 3/4 cup wholemeal. This makes the muffins a bit heavier in texture but they're still really delicious and healthier too., approved=true, user_name=Lauren, hs_createdate=1702249852583, rating_new__1_5_=4, id=11175356459}, {comment_text=Amazing and delicious., approved=true, user_name=kenna, hs_createdate=1702249851458, rating_new__1_5_=5, id=11174112372}, {comment_text=Was very yummy. Just needed to add a bit more milk and make the batter more sloppy., approved=true, user_name=Brodee, hs_createdate=1702249849184, rating_new__1_5_=5, id=11175604378}]}

Method

Preheat oven to 200°C bake / 180°C fan bake. Line a 12-hole muffin tin with paper cases (or grease well).
Cut feijoas in half, scoop out flesh with a spoon and roughly chop until you have 1 full cup (or 275g).
Melt butter in a large heatproof bowl. Stir in feijoas, eggs and Chelsea White Sugar.
Add flour, baking powder and milk and fold in until just combined. Divide mixture evenly between muffin tin holes.
Mix Chelsea Demerara Sugar and cinnamon together to make topping. Spoon over muffins.
Bake for 15-20 minutes, until muffins are golden and spring back when lightly pressed.
