Ingredients

  • 6 egg yolks
  • 200g Chelsea Raw Sugar
  • 6 egg whites
  • 250g finely ground hazelnuts
  • lemon peel of ½ lemon

Icing 

  • 1 ½ cups Chelsea Icing Sugar (225g)
  • 2 Tbsp cocoa powder 
  • 50g butter, softened
  • 2-3 Tbsp hot water

Method

Beat the egg yolks and Chelsea Raw Sugar until creamy.
Beat the egg whites until stiff.
Fold stiff egg whites, ground hazelnuts and lemon peel carefully into creamy egg yolk mixture.
Butter or spray a round cake tin (springform) and fill with hazelnut/egg mixture.
Bake at 160°C for approximately 1 hour.
Cool upside down on a wire rack, turn over when cool.
Place Chelsea Icing Sugar and cocoa powder in a medium bowl and stir to combine. Add softened butter and pour some of the hot water over the top. Mix together with a knife or spatula, adding more water as required to achieve a smooth, spreadable consistency.

Garnish with walnut halves and glaced cherries (halved).
