  • 1 cup Chelsea White Sugar (225g)
  • 1 egg
  • 1 ½ cups Edmonds Standard Grade Flour (225g)
  • 2 Tbsp cocoa powder
  • 1 tsp Edmonds Baking Powder
  • Pinch of salt
  • 1 cup roasted peanuts (155g)

Method

Preheat oven to 180°C bake. Grease two oven trays or line with baking paper.

Cream butter and Chelsea White Sugar until light and fluffy. Add egg and beat well. 

Sift flour, cocoa powder, baking powder and salt into creamed mixture. Stir to combine. Add peanuts and mix well. 

Roll tablespoons of mixture into balls. Place on greased trays and flatten with a fork. Bake for 15 minutes, or until firm. 

Leave to cool on trays for a couple of minutes before transferring to a wire cooling rack.
