I made this yesterday and it is lovely - have to make two as it gets eaten so quickly.Reduced sugar to 3/4 of a cup, and added a teaspoon of cocoa to darken it a bit.Also add half teaspoon cinnamon and grate a teaspoon of raw ginger in.I set the clock for 30 minutes and then watch it from there, usually ending up cooking for 40 minutes total.
Preheat oven to 180°C bake. Grease a loaf tin (approximately 22cm x 12cm) and line with baking paper.
Place dates, Chelsea White Sugar, butter and baking soda in a large bowl. Pour 1 cup of boiling water over the top and leave to cool for 10 minutes.
Sift in flour and baking powder. Mix until just combined, then transfer to prepared tin.
Bake for 40-50 minutes, until golden brown and a skewer inserted into the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack.
