  • ½ Cup Chelsea Raw Sugar
  • 1 ½ Cups Wholemeal Self Raising Flour
  • ⅔ Cup Rolled Oats
  • 100g butter
  • ½ Cup Chopped Walnuts
  • ½ Cup Dried Apricots
  • 1 ½ Cups Dried Peaches, chopped
  • 1 Tablespoon Chelsea Soft Brown Sugar
  • 2 Tablespoons Water
  • 2 Tablespoons Brandy

Method

Preheat oven to 190C.
Combine Chelsea Raw Sugar, flour, rolled oats and butter in a large bowl. Rub mixture with fingertips until it resembles breadcrumbs. Stir in walnuts.
Press half of the mixture into the base of a 18cm x 28cm lamington tin.
Combine dried apricots, peaches, Chelsea Soft Brown Sugar, water and brandy in a microwave safe bowl, cook on high for 2-3 minutes stirring once.
Spread the peach and apricot mixture over the oat mixture in the tin.
Sprinkle the remaining crumb mixture over and bake for 23 minutes or until golden brown.
