  • Pinch of Salt
  • 3 Eggs, separated
  • ½ Teaspoon Vanilla

Method

Mix the coffee, milk, half the Chelsea White Sugar and gelatine and heat in a double boiler.
Beat the egg yolks with the remaining Chelsea White Sugar. Pour on the hot coffee mixture and mix well.
Return to double boiler and cook until mixture coats the spoon, stirring constantly.
Remove the custard mixture from the heat and stir in the beaten egg whites and vanilla.
Pour into an oiled mould and chill until set. Turn out.
