Ingredients

  • 210 g butter
  • 125 g Chelsea Soft Brown Sugar
  • 2 tsp vanilla extract
  • 1 tbsp Chelsea Golden Syrup
  • 1 egg beaten
  • 210 g self raising flour
  • 60 g plain flour
  • 110 g desiccated coconut

Filling

  • Raspberry Jam
  • 50 g soft butter
  • 375 g Chelsea Berry Flavoured Icing
  • 1 tsp vanilla extract
  • 3-4 tbsp hot milk

Method

Cream butter and Chelsea Soft Brown Sugar until light and fluffy.
Add egg and vanilla extract, and Chelsea Golden Syrup.
Slowly add flour and coconut. Mix slowly to combine. Roll into a thin log, and refrigerate until firm, around 30 minutes.
Cut into 1 cm pieces, and roll into balls.
Place on a lined baking tray.
Push dough gently with back of fork.
Bake for 15 minutes at 160 degrees until golden.
Cool on wire rack. Filling
To prepare the filling, add hot milk and vanilla essence to Chelsea Berry Flavoured Icing.  Add soft butter, and whisk.
Spread jam on half of the cookies. Spread icing mix on the other half.
Sandwich together gently and enjoy!
