  • ¾ cup hazelnuts, toasted, skinned, and chopped
  • 1 cup almonds, blanched, toasted, and chopped
  • 1 cup finely chopped candied peel
  • ½ cup plain flour, sifted
  • ¼ cup cocoa
  • 100g dark chocolate chips
  • 3 tsps cinnamon
  • ⅓ cup honey
  • ½ cup Chelsea Caster Sugar
  • Chelsea Icing Sugar

Method

Preheat oven to 150ºC. Lightly grease and flour the side of a 20cm round cake tin, then line the base with baking paper
In a bowl, combine the nuts, peel, flour, cocoa, chocolate chips and cinnamon and mix thoroughly together.
Place honey and Chelsea Caster Sugar into a small saucepan and bring to the boil, then pour over the nut and fruit mixture, stirring well (it will be very sticky).
Turn into the lined tin, spread evenly and pressed down firmly.
Bake for 30-35 mins. Allow to cool, turn out and sprinkle with sifted Chelsea Icing Sugar.
