  • ¾ cups Chelsea White Sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 ¼ cups standard flour
  • 2 tsp baking powder
  • 1 tbsp cocoa
  • ½ cup Chelsea Soft Brown Sugar
  • 1 tbsp cornflour
  • ¼ cup cocoa
  • 2 cups boiling water

Method

Preheat oven 180°C. Grease a 6 - 8 cup ovenproof dish.
Beat together the butter, Chelsea White Sugar, egg and vanilla.  In another bowl, sift the flour, baking powder, and the first measure of cocoa together and fold into the beaten mixture.  Spoon into the ovenproof dish. Combine Chelsea Soft Brown Sugar, cornflour and second measure of cocoa and carefully sprinkle this over the mixture in the dish (do NOT mix it in).
Carefully pour the boiling water over the back of a spoon onto the pudding. Bake for 30 minutes or until the pudding springs back when lightly touched.
