Raw Caster Sugar
A lovely, gooey chocolate lava cake recipe - irresistible! It's the ultimate treat for chocolate lovers - a rich, delicate cake with a warm, gooey centre that flows like molten lava when cut open. Serve with a scoop of vanilla ice cream for the ultimate experience!
Preheat oven to 180°C bake. Grease 3 x 7-8cm round ramekins with a little butter.
Melt the butter and chocolate together using either a microwave (on a low power setting) or a bain-marie.
In a large bowl, use an electric mixer to beat the eggs and sugar together until pale and frothy.
Pour the melted chocolate into the egg mixture. Add flour and use a spatula to mix until combined.
Fill the ramekins approximately two thirds to three quarters full with the cake mix and bake in the oven for 12-15 minutes. The cake should still be a little wobbly on top (it is deliberately under-cooked to achieve the runny, lava centre).
Leave to cool for 1-2 minutes, then use a butter knife to loosen the edges. Tip each cake upside-down onto a plate and tap lightly on the bottom of the ramekin - the cake should fall out onto the plate.
Dust with cocoa powder, if desired, top with a scoop of ice cream and devour immediately!
