I only put tsp of baking powder & increased vanilla til 1sp per other's suggestions. I also realised that I didn't have cocoa powder so I melted 6squares of whittakers ginger caramel chocolate with the butter, added the milk & egg to that bowl and then mixed it through. I left it some what white (dry floury) in places and when cooked it is delicious & marbled on top. Quick, easy, nom nom
Preheat oven to 220°C bake. Line a 12-hole muffin tin with paper cases.
In a large bowl, stir flour, Chelsea Caster Sugar, baking powder and salt together.
In a separate bowl, whisk milk, butter, eggs and vanilla until combined. Fold into flour mixture together with the chocolate chips. Don't over mix or muffins will be tough.
Spoon into prepared tin. Bake for 12-15 minutes, until muffins spring back when lightly pressed on top, and a skewer inserted into the centre comes out clean.
Delicious served warm!
