  • ½ cup Chelsea Soft Brown Sugar (lightly packed) (100g)
  • ½ cup Chelsea Caster Sugar (113g)
  • ½ tsp vanilla essence
  • 1 egg
  • 1 ¾ cups Edmonds Self Raising Flour (263g)
  • ½ tsp salt
  • ½ cup chocolate chunks or chips (100g)

Additional tips

Substitute chocolate with Smarties, M&Ms or chopped nuts.

Method

Preheat oven to 180°C bake / 160ºC fan bake and grease or line two baking trays with baking paper.

Beat butter, Chelsea Soft Brown Sugar, Chelsea Caster Sugar and vanilla until pale and creamy. Add egg and beat until mixed.

Sift in flour and salt. Mix until just combined, then stir in the chocolate chunks or chips.
Roll tablespoons of mixture into balls and place on prepared trays. Press down lightly with a floured fork. Bake for approximately 12 minutes, until golden brown and crisp on the edges (or until cooked to your liking).
Additional tips

Substitute chocolate with Smarties, M&Ms or chopped nuts.
