Recipe notes:I made 2.5 times the recipe and only got 30 biscuits, despite only making each biscuit with a large teaspoon. I found they needed to be flattened more than I thought at first - pressed down into a thick biscuit shape rather than giving them just a light press. My first few still look very thick and didn't spread much. :) I might have gotten up to 40 biscuits if I had flattened them down that much to begin with.I used 3T of aquafaba in place of each egg white, which I think worked well. I reduced the sugar as recommended by other commenters and found them perfectly sweet enough even at 3/4c. This could possibly be reduced slightly. I have made these biscuits, i dunked half of the biscuit into melted chocolate just to top it off, not bad.
Preheat oven to 160°C. Line 2 baking trays with baking paper. Dust this with Icing Sugar.
Mix all ingredients to a thick paste. Sieve a layer of Icing Sugar onto the work surface and roll small balls of the mixture in the Icing Sugar to coat well.
Press down on the trays leaving plenty of room to spread. (Biscuits just need to be pressed down slightly not flattened out with a fork as you do with other biscuits).
Bake for 15 - 18 minutes then cool on a wire rack - store in an airtight container.
