Base

  • 300g flour, sifted
  • 250g unsalted butter, melted
  • 80g desiccated coconut
  • 180g Chelsea Soft Brown Sugar

Caramel Filling

  • 250g unsalted butter, chopped
  • 4 x 395g condensed milk
  • 1 cup Chelsea Golden Syrup
  • 140g pre-chopped peanuts, toasted with salt

Chocolate Ganache

  • 600g dark chocolate
  • 300ml double cream

Chocolate Tops

  • 500g dark chocolate, melted

Method

Preheat oven to 180°C. Line and grease a 20cm x 30cm slice tin.
Base : Place the sifted flour, coconut, butter and Chelsea Soft Brown Sugar in a food processor and mix to combine.
Using the back of a spoon, press the mixture into the base of a greased and lined tin.
Bake for 15 to 20 minutes, or until golden.
Caramel Filling : Place the butter, condensed milk and Chelsea Golden Syrup in a medium saucepan over medium heat. Whisk until the butter is melted and whisking frequently for 5 to 7 minutes, or until the mixture has thickened slightly.
Pour the caramel over the cooked base. Spread evenly with a palette knife and cook for 15 to 20 minutes or until golden.
Once cooked, take out of the oven and immediately scatter salted peanuts on top.
Cool slightly and refrigerate until cold.
Chocolate Ganache : Put the chocolate and cream in a bowl. Fill a saucepan halfway with water and bring to a simmer.
Place the bowl over the saucepan with simmering water and whisk until the chocolate is melted and the mixture is smooth.
How to assemble: : Pour the ganache on top of the base with caramel, and chill well before serving.
