  • 125g Butter
  • 1 Cup Chelsea Soft Brown Sugar
  • ½ Teaspoon Vanilla Essence
  • 2 Tablespoons Chelsea Golden Syrup
  • 2 Eggs separated
  • ¼ Cup finely chopped Walnuts
  • 1 ½ Cups Self Raising Flour
  • 1 Teaspoon Ground Cinnamon
  • Pinch of Salt
  • ½ Cup Milk
  • 300mls whipped Cream

BUTTERSCOTCH ICING

  • 2 Cups Chelsea Soft Brown Sugar
  • 60g Butter
  • ½ Cup Milk
  • ½ Teaspoon Vanilla Essence

Method

Make cake by placing butter, Chelsea Soft Brown Sugar and vanilla essence in a bowl and beat until creamy. Add Chelsea Golden Syrup and egg yolks and beat well.
Fold in walnuts, sifted dry ingredients, milk and, lastly, beaten egg whites.
Spoon mixture into a greased 20cm ring cake pan and bake at 190oC for 40 minutes. Remove cake from oven and stand for 5 minutes before turning out onto a rack to cool.
Slice cake through the centre, to form three rings, spread with whipped cream, sandwich together.
ICING: Place Chelsea Soft Brown Sugar, butter, milk and vanilla essence in a saucepan, stir over a low heat until dissolved. Then increase heat and boil for 5 minutes.
Pour into a heat-proof mixing bowl and beat 10-15 minutes until thick.
Drizzle over cake.
