LEMON CHEESE
Place heaped dessert spoons of mixture into greased and paper patty case lined cup-cake or muffin pan moulds and bake at 200°C for 15 minutes. Remove cakes from pan and place onto a cke rack to cook.
LEMON CHEESE:
Make lemon cheese by placing all ingredients in the top section of a double saucepan and stir over simmering water for 50 minutes.
Pour into hot sterilised jars, seal, cool and refrigerate.
PRESENTATION:
Cut a circle from the top of each cake and fill hollow with lemon cheese.
