CAKE

  • 125g Butter
  • ¾ Cup Chelsea Caster Sugar
  • 1 Teaspoon Vanilla Essence
  • 2 Eggs
  • 2 Cups Self Raising Flour
  • Pinch of Salt
  • ⅔ Cup Milk

LEMON CHEESE

  • 1 Cup Chelsea Caster Sugar
  • Finely grated Rind of 4 Lemons
  • Juice of 4 Lemons (1 Cup)
  • 4 Egg Yolks
  • 125g Butter

Method

Make cakes by placing butter, Chelsea Caster Sugar and vanilla essence in a bowl and beat until creamy, approx. 5 minutes.   Add eggs and beat well.
Fold in sifted dry ingredients and milk.

Place heaped dessert spoons of mixture into greased and paper patty case lined cup-cake or muffin pan moulds and bake at 200°C for 15 minutes. Remove cakes from pan and place onto a cke rack to cook. 

LEMON CHEESE:
Make lemon cheese by placing all ingredients in the top section of a double saucepan and stir over simmering water for 50 minutes.

Pour into hot sterilised jars, seal, cool and refrigerate. 

PRESENTATION:
Cut a circle from the top of each cake and fill hollow with lemon cheese.

Cut cake circles in half and sit in the lemon cheese filling to form butterfly wings.
